Walnut Crescents with Sprayed Chocolate Whipped Cream

To prepare this delicacy, you need a pastry bag or a decoration. It would be best to work quickly with the dough and the cream.

Ingredients:

Dough

  • 1 1/2 cups of powdered sugar
  • 2 cups of ground walnuts
  • 1/2 cup plain flour
  • 4 egg whites

Cream

  • 1 cup of granulated sugar
  • 1 cup of butter
  • 1/4 cup of dark chocolate
  • 4 egg yolks
  • 2 eggs
  • 2 tablespoons of cocoa powder

Glaze

  • 2 cups of baking chocolate
  • 1/2 cup of butter

Method:

  1. First, lightly beat the egg whites with the sugar in a saucepan using a whisk.
  2. Then, continue whipping with the help of a hand whisk over steam.
  3. Set aside the mixture and stir in the ground nuts when it forms stiff snow.
  4. Next, fill a pastry bag with the dough mixture and pipe crescents on a baking sheet.
  5. Place in an oven preheated to 284°F and dry for approximately 25 minutes until golden.
  6. After baking, let the rolls cool completely, in the meantime prepare the filling.
  7. Whisk the egg yolks, eggs, sugar, and cocoa together over low heat.
  8. Then, add the melted cooking chocolate to the mixture and whisk lightly.
  9. Allow the mixture to cool, add the butter, and beat until creamy.
  10. Using a piping bag, pipe the cream onto the rolls and leave to set in the fridge.
  11. Then dip the crescents in chocolate melted with butter and let them harden again.
