Walnut Crescents with Sprayed Chocolate Whipped Cream

To prepare this delicacy, you need a pastry bag or a decoration. It would be best to work quickly with the dough and the cream.
Ingredients:
Dough
- 1 1/2 cups of powdered sugar
- 2 cups of ground walnuts
- 1/2 cup plain flour
- 4 egg whites
Cream
- 1 cup of granulated sugar
- 1 cup of butter
- 1/4 cup of dark chocolate
- 4 egg yolks
- 2 eggs
- 2 tablespoons of cocoa powder
Glaze
- 2 cups of baking chocolate
- 1/2 cup of butter
Method:
- First, lightly beat the egg whites with the sugar in a saucepan using a whisk.
- Then, continue whipping with the help of a hand whisk over steam.
- Set aside the mixture and stir in the ground nuts when it forms stiff snow.
- Next, fill a pastry bag with the dough mixture and pipe crescents on a baking sheet.
- Place in an oven preheated to 284°F and dry for approximately 25 minutes until golden.
- After baking, let the rolls cool completely, in the meantime prepare the filling.
- Whisk the egg yolks, eggs, sugar, and cocoa together over low heat.
- Then, add the melted cooking chocolate to the mixture and whisk lightly.
- Allow the mixture to cool, add the butter, and beat until creamy.
- Using a piping bag, pipe the cream onto the rolls and leave to set in the fridge.
- Then dip the crescents in chocolate melted with butter and let them harden again.
