Tender Coconut Crescent Cookies

Vanilla rolls are especially classic, but this recipe will easily convince you that replacing nuts with coconut is not bad.

Ingredients:

  • 4 cups finely shredded coconut
  • 2 cups plain flour
  • 1/2 cup sugar
  • 1/3 cup milk
  • 1 cup of soft butter
  • 2 eggs
  • 1 tbsp of vanilla sugar
  • 1 tbsp baking powder
  • powdered sugar for coating

Method:

  1. Beat the softened butter in a food processor.
  2. Add all remaining ingredients, i.e., coconut, flour, sugar, eggs, milk, baking powder, and vanilla sugar, and process.
  3. Transfer the dough to a floured rolling pin when it is compact and soft.
  4. The dough should not stick to your hands; when you roll it into a rolling pin and bend it, it should not crack.
  5. If it crackles, add a little more milk. If the dough sticks to your hands, use more flour.
  6. Break off small pieces of the dough, shape them into a ball in your palms, and then roll them between your palms into rolls.
  7. Then, bend them to form a roll shape.
  8. Place the coconut rolls on a baking sheet lined with baking paper.
  9. Preheat the oven to 350°F.
  10. Bake for approximately 20-25 minutes, depending on the size of the cookies, until the bottom is golden brown.
  11. Remove the cookies from the oven and let cool slightly.
  12. In the end, roll the still-warm rolls in powdered sugar
