Vanilla rolls are especially classic, but this recipe will easily convince you that replacing nuts with coconut is not bad.
Ingredients:
- 4 cups finely shredded coconut
- 2 cups plain flour
- 1/2 cup sugar
- 1/3 cup milk
- 1 cup of soft butter
- 2 eggs
- 1 tbsp of vanilla sugar
- 1 tbsp baking powder
- powdered sugar for coating
Method:
- Beat the softened butter in a food processor.
- Add all remaining ingredients, i.e., coconut, flour, sugar, eggs, milk, baking powder, and vanilla sugar, and process.
- Transfer the dough to a floured rolling pin when it is compact and soft.
- The dough should not stick to your hands; when you roll it into a rolling pin and bend it, it should not crack.
- If it crackles, add a little more milk. If the dough sticks to your hands, use more flour.
- Break off small pieces of the dough, shape them into a ball in your palms, and then roll them between your palms into rolls.
- Then, bend them to form a roll shape.
- Place the coconut rolls on a baking sheet lined with baking paper.
- Preheat the oven to 350°F.
- Bake for approximately 20-25 minutes, depending on the size of the cookies, until the bottom is golden brown.
- Remove the cookies from the oven and let cool slightly.
- In the end, roll the still-warm rolls in powdered sugar
