Honey Cannoli with Caramel Cream

The candy created from this recipe has the perfect texture – soft, crunchy, and simply divine.
It’s definitely worth trying if you’re looking for a new dessert recipe.
Ingredients (approx. 60 pcs.)
Dough
- 2 1/2 cup flour
- 2 cups powdered sugar
- 3 tablespoons of liquid honey
- 1/4 teaspoon of baking soda
- 3 egg yolks
- 1 cup room-temperature butter
Filling
- 2 1/2 cup granulated sugar
- 1 1/2 cup cream cheese
- 2 cups whole milk
- 1 tablespoon of vanilla pudding
- 1 tablespoon of vanilla sugar
- 2 cups butter
- 1 1/2 cup dark chocolate frosting
Method
Dough
- Make a smooth dough from all the ingredients into a cannoli, wrap it in cling film, and leave it in the fridge for about an hour.
- Then, roll the dough into a thin sheet and cut out circles with a diameter of 2.5 inches. Grease a piping bag with butter and roll the cut circles in it.
- Bake until golden at 350°F.
- When the cannoli shells are golden, remove them from the oven, as they may dry out too much and fall apart later.
Filling
- Caramelize the sugar, cover with cream cheese, and mix until the caramel melts.
- Set the mixture aside, stir occasionally, and wait until the caramel thickens.
- Add custard and vanilla sugar to the milk, boil, and let cool.
- Whip the butter at room temperature into a foam, add the cooled custard and caramel a little at a time. Blend into a smooth cream.
- Dip the ends of the tubes in the chocolate coating and let it harden. Put the filling in a decorating bag and fill the prepared shells.
- Your chocolate-dipped honey cannoli is ready. You can serve!
