Homemade Cardamom Eggnog

Cinnamon or nutmeg are typical spices for scrambled eggs, but you can’t go wrong with cardamom, either.
Ingredients:
- 12 egg yolks
- 4 cups whole milk
- 4 cups whipping cream
- 2 cups brandy
- 1 and 1/2 cup granulated sugar
- 2 vanilla pods
- 2 teaspoons ground cardamom
Method:
- In a saucepan over low heat, bring the milk, scraped vanilla pods, and cardamom to a boil, stirring occasionally.
- Meanwhile, beat the egg yolks with the sugar until foamy.
- Then, slowly pour the hot milk into the egg foam and whisk to combine everything.
- Pour the resulting mixture back into the saucepan and cook over low heat for 2-3 minutes, stirring constantly, until it thickens slightly.
- Remove from heat and let cool.
- Once cool, stir in the cream and brandy.
- Store in the refrigerator.
Before serving, sprinkle the eggnog with more cardamom and add a cinnamon stick.
