Homemade Cardamom Eggnog

Cinnamon or nutmeg are typical spices for scrambled eggs, but you can’t go wrong with cardamom, either.

Ingredients:

  • 12 egg yolks
  • 4 cups whole milk
  • 4 cups whipping cream
  • 2 cups brandy
  • 1 and 1/2 cup granulated sugar
  • 2 vanilla pods
  • 2 teaspoons ground cardamom

Method:

  1. In a saucepan over low heat, bring the milk, scraped vanilla pods, and cardamom to a boil, stirring occasionally.
  2. Meanwhile, beat the egg yolks with the sugar until foamy.
  3. Then, slowly pour the hot milk into the egg foam and whisk to combine everything.
  4. Pour the resulting mixture back into the saucepan and cook over low heat for 2-3 minutes, stirring constantly, until it thickens slightly.
  5. Remove from heat and let cool.
  6. Once cool, stir in the cream and brandy.
  7. Store in the refrigerator.

Before serving, sprinkle the eggnog with more cardamom and add a cinnamon stick.
