Gluten-free Nuremberg Gingerbread Cookies

Sometimes, you don’t have a tolerance set to 100% for everything, or you simply care about your health and want top-fit recipes. That’s why we bring you a recipe for Nuremberg gingerbread cookies, which will bring you a fantastic yet healthy snack in your kitchen.
Ingredients:
- 2 1/4 cups of gluten-free flour
- 1 cup + 2 tablespoons of sugar
- 4 larger eggs
- 1/2 package of baking powder
- 3 teaspoons gingerbread spice
- pinch of salt
- grated lemon peel from one lemon
- 1 1/4 cups ground almonds
- 1 1/4 cups ground nuts
- 3/4 cup of candied orange peel
- 1/4 cup of candied lemon peel
- 3/4 cup of marzipan
Instructions:
- Whisk the eggs with the sugar into a foam.
- Grate marzipan into it, add gingerbread spices, candied orange, and lemon peel, and mix the mixture well.
- Then, add the walnuts, almonds, and baking powder.
- Sift the flour into the mixture in the last step and mix everything well.
- Prepare a tray lined with baking paper.
- Using an ice cream scoop, shape the mixture into small balls.
- Leave enough space for each gingerbread; they will expand during baking.
- Preheat the oven to 375°F.
- Bake for 25-30 minutes.
- Decorate the baked gingerbread with chocolate glaze or lemon or sugar glaze according to your taste.
