Ginger-Coconut Apricot Balls

The ideal taste of apricot is combined with a hint of ginger, making these balls a delicious treat.

Ingredients:
- 1 cup of dried apricots
- 1/3 cup of shredded coconut, plus extra for rolling
- 1/4 cup of raw almonds
- 1 tablespoon of fresh ginger, grated
- 1 tsp fresh ginger
- 1 tablespoon of honey
- salt
- coconut for coating
- crushed pistachios
Instructions:
- Place the dried apricots, shredded coconut, raw almonds, and grated ginger into a food processor. Pulse until the mixture becomes finely chopped.
- Add in the honey and pulse again until the mixture becomes sticky and forms a ball.
- Using a spoon, scoop out small portions of the mixture and roll them into balls using your hands.
- Roll each ball in the extra shredded coconut until they are fully coated.
- Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes before serving.
- If the dough is too sticky, add grated coconut.
- If it’s too thick, you can add apricots or honey or maple syrup.
