Crispy Panko Fish

Ingredients
- 3 lbs white fish – carp, cod, or halibut
- 1 cup panko bread crumbs
- 1 cup flour
- 1 cup parmesan cheese
- 1/4 cup milk
- 1 egg
- 2 tablespoons of oil
- 1 tsp salt to taste
- 1 teaspoon of black pepper
Method
- Preheat the oven to 350°F.
- Spread the breadcrumbs on a baking sheet sprayed with cooking oil. Fry them for 3-4 minutes until golden.
- Transfer the breadcrumbs to a bowl and add Parmesan cheese, salt, and black pepper to taste. Mix well.
- Increase the oven temperature to 400°F.
- Mix eggs, mayonnaise, flour, and salt and pepper.
- Dip the carp fillets in the batter and wrap them in breadcrumbs.
- Transfer to a greased baking sheet and spray with an oil.
- Place the tray in the oven and bake for 12 minutes until crispy.
