Cashew Butter Cookies

If you’re avoiding Christmas cookies for fear of the calories, try these delicious gluten-free and sugar-free brown rice cookie recipes.
Ingredients:
- 1 cup of brown rice flour
- 4 tablespoons of keto sweetener (allulose, monk fruit, stevia or erythritol)
- 1 egg
- 4 tablespoons of cashew butter
- A tablespoon of water
- A teaspoon of baking soda
- Lemon zest from half a lemon
Method:
- Whisk the egg with erythritol and lemon zest into a thick foam.
- Mix rice flour with baking soda and beaten egg, add water, and mix to a smooth dough.
- Roll out the dough on a floured work surface to a thickness of approx. 0.1 inches and cut out circles or other shapes of your choice.
- Bake them on a tray lined with baking paper for 13-14 minutes at a temperature of 350°F.
- After cooling, glue the wheels together with cashew butter.
