Cashew Butter Cookies

If you’re avoiding Christmas cookies for fear of the calories, try these delicious gluten-free and sugar-free brown rice cookie recipes.

Ingredients:

  1. 1 cup of brown rice flour
  2. 4 tablespoons of keto sweetener (allulose, monk fruit, stevia or erythritol)
  3. 1 egg
  4. 4 tablespoons of cashew butter
  5. A tablespoon of water
  6. A teaspoon of baking soda
  7. Lemon zest from half a lemon

Method:

  1. Whisk the egg with erythritol and lemon zest into a thick foam.
  2. Mix rice flour with baking soda and beaten egg, add water, and mix to a smooth dough.
  3. Roll out the dough on a floured work surface to a thickness of approx. 0.1 inches and cut out circles or other shapes of your choice.
  4. Bake them on a tray lined with baking paper for 13-14 minutes at a temperature of 350°F.
  5. After cooling, glue the wheels together with cashew butter.
