Carrot Apple Horseradish Spread

Ingredients
- 2 cups carrots
- 2 small apples
- 2 small onions
- 1 cup stock
- 4 tablespoons of mayonnaise
- 2 teaspoons horseradish (freshly grated)
- 6 tablespoons chives (finely chopped)
- 4 slices of bread (the spread tastes excellent with whole-grain bread)
- salt and pepper
Method
- Peel the carrots, apples, and onions. Quarter the apples and remove the cores.
- Cut everything into small cubes and cook in the broth (covered) for about 20 minutes on low heat. Shortly before the end of cooking, let the liquid in the open pot come to a complete boil. Leave to cool.
- Finely sieve the vegetables, mix in mayonnaise, 4 spoons of chives and horseradish, salt and pepper.
- Spread the finished spread on the bread in a thick layer.
- You can also use it as a dip for raw vegetables or crackers if you like.
