Soft Coconut cannolis with cream

You don’t always have to add coconut only to the dough; you can also use it in fillings. This typically English recipe is an example.

Ingredients:

  • 1 package of puff pastry
  • 2 cups of mascarpone or cottage cheese
  • 4 cups whipping cream
  • 1 cup powdered sugar
  • 1/4 cup finely shredded coconut
  • 1/2 teaspoon of vanilla extract

Method:

  1. Preheat the oven to 400°F.
  2. Roll out the puff pastry into a square shape.
  3. Cut the dough into strips about 1.2 inches wide using a pizza cutter or a knife.
  4. Wrap each strip around a puff pastry mold in the shape of a tube, hollow roll, or cone.
  5. Place them on a baking sheet lined with baking paper and bake in the oven for 15-18 minutes or until golden.
  6. The puff pastry is very tender. If you underbake it, the corners will unroll, but if you overbake it, they will be difficult to remove from the molds.
  7. Remove from the oven and carefully remove the hollow rolls from the molds.
  8. Leave to cool, and prepare the coconut cream in the meantime.
  9. Beat the mascarpone or cottage cheese until smooth and creamy.
  10. Add the powdered sugar and coconut, gradually increasing the mixer speed until well combined.
  11. Finally, add the whipping cream to the mixture, start whipping on low and gradually increase the speed.
  12. When you get a thick cream, it’s done.
  13. Subsequently, it is enough to fill the hollow rolls on both sides with the help of a decorating bag and put them in an airtight container in the refrigerator for at least 8 hours.

Serve the cream-filled coconut rolls sprinkled with powdered sugar.
