Old-Fashioned Peanut Butter Balls

Even peanut butter can be used to make delicious and simple cookies. This recipe is an example of that. Enjoy them on their own, decorate them with icing sugar, coconut, or sprinkles, or dip them in melted chocolate.
Ingredients
For balls:
- ½ cup butter, room temperature
- 2 cups creamy peanut butter
- 2 teaspoons of vanilla extract
- 4 cups powdered sugar, sifted
- ¼ teaspoon salt
Optional for decoration:
- icing sugar
- shredded coconut
- sprinkles
- finely chopped walnuts
- melted chocolate
Method
- Line a large tray with baking paper.
- In a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer on medium speed, mix the butter, peanut butter, and vanilla until thoroughly combined.
- Turn the mixer down to low speed and gradually add the powdered sugar and salt, mixing until combined.
- Set the mixer to medium and beat for about 2 minutes.
- Scoop the dough onto a tablespoon and form a ball.
- Use up all the batter.
- Place the balls on the prepared tray and put them in the fridge for an hour.
- Quickly roll the cooled balls in your palms to smooth the outsides.
- Roll the balls in grated coconut, powdered sugar, sprinkles, or finely chopped nuts.
- You can also dip the balls in chocolate.
