Oh-So-Fancy, Yet Surprisingly Easy: Gluten-Free Florentines

Florentines: those delicate, lacy cookies, studded with jewel-toned fruits and nuts, then dipped in rich dark chocolate. They look like they require a pastry chef’s touch, but guess what? The gluten-free version is shockingly simple!
Swapping regular flour for a touch of gluten-free alternative is all it takes.
Perfect for gifting (or, let’s be honest, hoarding), these elegant treats prove that gluten-free baking can be utterly indulgent.
Ingredients:
- 1/4 cup of butter
- 1/2 cup of whipping cream
- 3/4 cup of sugar
- 2 spoons of honey
- 1/4 cup of dried cranberries
- 1/4 cup of grated coconut
- 1/2 cup of almond slices
- 1/4 cup of candied orange peel
- a little grated ginger
- 1/4 cup of rice flour
- 1 cup of high-quality baking chocolate, chopped
- pinch of salt
Method:
- Boil cream, butter, sugar, and honey, add coconut, flour, and all other ingredients except chocolate.
- Make lumps from the dough, and bake at 350°F for about 10 minutes.
- After cooling, add chocolate.
