Mug gingerbread cookies

This Christmas recipe is perfect for those who are in a hurry and like to bake with a measuring cup.

Ingredients

  • 2.5 cups plain flour
  • 1 cup powdered sugar
  • 2 tablespoons vegetable fat or oil
  • 2 spoons of honey
  • 1 tablespoon of gingerbread spice
  • 1 teaspoon of baking powder
  • 2 eggs
  • 1 egg yolk
  • 2 tablespoons of milk

Method

  • Preheat the oven to 180°C.
  • Prepare baking sheets and line them with baking paper.
  • Heat the fat and honey – if you use oil, do not heat it.
  • Mix the sugar and eggs into the fat and honey mixture.
  • Next, sprinkle flour with baking powder and add gingerbread spices.
  • Work out a stiffer dough – it must not be sticky.
  • Let it rest in the fridge for at least 6 hours.
  • Roll out a thick sheet of 4 mm and cut out the shapes.
  • Before putting the cookies in the oven, brush them with a beaten egg yolk.
  • Bake for about 5-6 minutes and allow to cool before decorating.
