Ingredients

  • 2 cups of unsalted cashew nuts
  • 2 cups of powdered sugar
  • 7-10 drops of almond extract
  • 2 teaspoons granulated sugar (dissolved in ¼ cup hot water)
  • Food coloring (of your choice)

Method

  • Grind the cashews into a fine powder. Then, sift it using a sieve. If you have larger pieces of nuts left, collect them and grind them all again into a fine powder.
  • Mix the icing sugar with the cashew nut powder in a bowl. Add a few drops of almond extract, but do not add too much to avoid an overpowering aroma.
  • Pour the prepared hot water and sugar into the bowl in small portions and divide the resulting mixture according to how much food coloring you have.
  • Make a well in the center of each portion of the mixture and add about 4-5 drops of food coloring.
  • Start kneading the dough. If an oily substance appears when kneading the dough, it is okay.
  • Once the dough is ready, divide it into smaller balls and shape them using molds in the shape of shells, stars, etc.
  • Let the unbaked marzipan Christmas cookies prepared in this way dry in the air for about 6-8 hours.
  • Once the marzipan shells are dry, you can serve them or store them in an airtight container. Mussels stored this way will last for 2-3 weeks at room temperature and up to a month if you keep them in the refrigerator.
