Linzer cookies made of rice flour

Ingredients:
- 1 cup of rice flour
- 6 tablespoons of sugar
- 1/2 cup of softened butter
- half a lemon
- 1 egg
Method:
- Beat eggs with sugar in a bowl. Add softened butter, lemon zest, and rice flour and knead to form a compact dough.
- Wrap it in a plastic bag and put it in the fridge for at least an hour.
- Dust the work surface with a little rice flour and roll out the dough to about 0.1 inches thick.
- Use cookie molds to cut out circles or other shapes. Place them on a baking sheet lined with baking paper and bake for about 10 minutes at 350°F until golden.
- Spread the cooled cookies with your favorite marmalade; always connect two circles on top of each other and sprinkle with sugar. Depending on your taste, you can also add cinnamon or vanilla extract to the dough.
