What will you need for the Linnaeus cookies?
- 200 g of buckwheat flour
- 150 g of whole wheat flour
- 250 g of butter
- 110 g cane sugar
- 1 spoon of vanilla sugar
- 2 egg yolks
- grated rind from one lemon
- homemade marmalade to taste for pairing
How do you prepare cookies with buckwheat flour?
- Using a stick blender, blend the cane sugar into a fine powder.
- Brush the butter with egg yolks and cane and vanilla sugar. Add the lemon zest and flour.
- Make a smooth dough and wrap it in cling film. Leave the dough in the fridge until the next day.
- Roll out the dough using cling film so that you don’t have to use extra flour for the flouring.
- You can use classic cutters to cut out, but you can also use a special mold.
- Bake the candy in a preheated oven at 150 °C until pink.
- The whole grain Linnaeus candy stands out even more in combination with the non-traditional rosehip marmalade.
