What will you need for the Linnaeus cookies?

  • 200 g of buckwheat flour
  • 150 g of whole wheat flour
  • 250 g of butter
  • 110 g cane sugar
  • 1 spoon of vanilla sugar
  • 2 egg yolks
  • grated rind from one lemon
  • homemade marmalade to taste for pairing

How do you prepare cookies with buckwheat flour?

  1. Using a stick blender, blend the cane sugar into a fine powder.
  2. Brush the butter with egg yolks and cane and vanilla sugar. Add the lemon zest and flour.
  3. Make a smooth dough and wrap it in cling film. Leave the dough in the fridge until the next day.
  4. Roll out the dough using cling film so that you don’t have to use extra flour for the flouring.
  5. You can use classic cutters to cut out, but you can also use a special mold.
  6. Bake the candy in a preheated oven at 150 °C until pink.
  7. The whole grain Linnaeus candy stands out even more in combination with the non-traditional rosehip marmalade.
