Hungarian fish soup

A bit spicy and sharp, but anyone who likes it must try it. An intense fish broth with large pieces of meat is combined with a touch of pepper.

Ingredients:

  • 25 oz of perch and catfish (or other fish)
  • 25 oz of carp tails
  • 3 large onions onions
  • 4 cloves of garlic
  • 0.5 gallons of water
  • salt to taste
  • pepper to taste
  • 2 spoons of paprika
  • 1 teaspoon of hot pepper

Method:

  • Put fish meat cut into pieces, diced onion, pressed garlic, water, salt, and pepper into the pot.
  • Bring to a boil, add peppers, and cook for 25 minutes.
  • Strain the soup and pass it through a strainer.
  • Cut the fish meat or fillet into pieces, salt it, and add it to the soup.
  • Cook for another 15 minutes until soft.

If you don’t like fish soup because of its smell or the taste of fish, we have a light option for you. It will certainly be liked by those who would enjoy this delicacy but, for some reason, cannot indulge in fish.

Ingredients:

  • 1/4 cup of butter
  • 1/2 cup of semolina
  • 1 parsley
  • ½ large celery
  • 3 carrots
  • 6 cups of broth (vegetable, meat)
  • 1 egg yolk
  • 1/2 cup of cream
  • salt
  • pepper
  • sprig of parsley for garnish

For dumplings:

  • 2 eggs
  • 1 small onion
  • butter
  • 1 teaspoon plain flour
  • breadcrumbs
  • ½ teaspoon marjoram
  • 1 clove of garlic
  • salt
  • pepper

Method:

  • Grate the vegetables on a coarse grater.
  • Fry semolina in butter and add vegetables, taste.
  • Pour over the broth and cook for about 20 minutes.
  • At the end, add cream and soften with egg yolk.
  • Allow to boil and garnish with chopped parsley.

Preparation of dumplings:

  • Prepare the gnocchi by dicing an onion and frying half of it in butter. Add one egg as if you were making scrambled eggs.
  • Allow the mixture to cool slightly, then mix in the second egg, finely chop the remaining onion, and press garlic, flour, salt, pepper, and breadcrumbs to form dumplings from this consistency.
  • Boil the dumplings in boiling salted water until they float.
  • If we want, we serve the soup with a fried roll.
