Holiday Crescent Cookies with coconut and sugar coating

This is a non-traditional variant of the popular Christmas pastry, decorated not with chocolate but with a sugar coating. Try it; you’ll see that you like it!

Ingredients:

  • 3 cups plain flour
  • 1 and 1/2 cups finely shredded coconut
  • 1/2 cup softened butter
  • 3/4 cup sugar
  • 3 eggs
  • 1/2 cup orange juice
  • 1 teaspoon of vanilla extract
  • 3 teaspoons of baking powder

Glaze

  • 2 cups powdered sugar
  • 1/4 cup milk
  • coconut flakes or sprinkles of your choice

Method:

  1. Preheat the oven to 320°F and line two trays with paper.
  2. In a bowl, mix the butter with the sugar until fluffy.
  3. Stir in eggs, orange juice, and vanilla.
  4. Mix the flour and baking powder in another bowl, gradually add them to the cream mixture, and mix well.
  5. Finally, add the coconut.
  6. Knead it into a dough, which you then shape into crescents.
  7. Transfer the candy to the baking sheets, then bake for 8-10 minutes or until the edges are lightly browned.
  8. Leave to cool.
  9. Meanwhile, mix the icing sugar and milk in a small bowl.
  10. Spread the icing on the coconut rolls and decorate with coconut flakes or Christmas sprinkles.
