Gluten-free vanilla and walnut rolls

If you don’t want to or can’t use regular white flour when baking, don’t worry. Vanilla rolls can be baked without gluten!

Ingredients:

  • 1 1/2 cup of rice flour
  • 1 cup of softened butter
  • 3/4 cup of ground walnuts
  • 1/4 cup of powdered sugar
  • 2 egg yolks
  • 1 teaspoon of vanilla extract

For wrapping

  • 2 tbsp of powdered sugar
  • 2 tablespoons of vanilla sugar

Method:

  1. Preheat the oven to 320°F.
  2. In a bowl, mix and thoroughly incorporate all the listed ingredients by hand or using a food processor.
  3. Shape the dough into a ball, wrap it in cling film and refrigerate overnight.
  4. Remove the dough and divide it into four equal parts the next day.
  5. From each part, roll out one long roll approximately 0.4-0.8 inches thick.
  6. Subsequently, cut pieces from it with a knife, which then shape into the shape of a roll.
  7. Adjust the length of the pieces to the desired size of the rolls.
  8. Preheat the oven to 350°F and bake the vanilla rolls until golden brown for approximately 10-15 minutes, depending on their size.
  9. Mix the vanilla and powdered sugar and cover the slightly cooled rolls.
