Filling for Linzer Tarts

Ingredients

  • 2 cups whole milk
  • 1 vanilla pod
  • 1/2 cup powdered sugar
  • 1 oz cornstarch
  • 1/4 teaspoon salt
  • Yolks from 4 large eggs
  • 1 oz butter (cut into cubes)

Method

  • Mix the milk and the scraped vanilla pod together in a saucepan with its seeds.
  • Bring to a boil.
  • Remove from heat and let infuse for 30 minutes.
  • Create an ice bath in a large bowl.
  • Mix sugar, cornstarch, and salt.
  • Add the egg yolks and beat until the mixture is pale yellow, smooth, and fluffy, about 1 minute.
  • Remove the vanilla pod from the milk.
  • While constantly whisking, slowly pour the milk in a thin stream into the yolk mixture.
  • Then put the mixture on the stove and cook, whisking constantly, until the cream thickens, about 5 minutes.
  • When it starts to bubble, continue beating for 1 minute.
  • Set aside and whisk in the butter until melted and thoroughly combined.
  • Transfer the bowl to the prepared ice bath to chill for 30 minutes, then refrigerate for 2 hours.
Line cakes filled with vanilla cream and decorated with fruit.
