Deli Salad Mayo Spread

This potato spread recipe is easy, filling, and delicious! Your guests won’t believe their taste buds when they try these sandwiches.
Ingredients
- 1 1/2 cup ham (or soft salami)
- 3 1/2 cup potatoes (waxy potatoes best)
- 2 medium carrots
- 6 large eggs
- 3 celery sticks
- 1 cup mayonnaise
- 1 teaspoon of salt
- 0.5 teaspoons of black pepper
Method
- Place the potatoes in a large pot of water and bring to a boil. Turn down the heat and simmer, covered, for 10 minutes.
- Add the carrots and continue to cook for another 5 minutes.
- Add the egg and cook for another 10 minutes.
- Drain the water and let everything cool.
- Cut the potatoes into small pieces.
- Finely chop the cooked carrot and celery.
- Peel the eggs and roughly chop them into small pieces.
- Add everything to a large bowl.
- In a small bowl, mix mayonnaise, salt and pepper.
- Add the mayonnaise mixture to the potato salad and toss until well combined.
- Refrigerate for at least 4 hours before serving.
