Decorated Christmas gingerbread cookies with chocolate

Make sweet gingerbread a little differently.
Replace the classic dough with a chocolate-filled dough!
Ingredients
- 2 and ¼ cups plain flour (for dusting)
- ½ cup unsweetened cocoa powder
- ½ teaspoon fine salt
- ¼ teaspoon of baking soda
- 1 and ½ (about 12 tablespoons) unsalted butter (at room temperature)
- 1 and ¼ cup sugar
- 1 large egg
- ½ teaspoon of vanilla extract
- 1 bar of chocolate (of your choice)
Method
- Mix the flour, cocoa powder, salt, and baking soda in a bowl and set aside.
- Put the butter in another bowl and beat it, on medium speed, until smooth.
- Add the sugar and beat until light and fluffy.
- Add the egg and vanilla and beat again.
- Melt the chocolate in a water bath and add it to the mixture. Stir well.
- Reduce the speed of the mixer and add the flour mixture from the first bowl. Mix until everything is combined.
- Divide the dough in half. Form an oval from each half and wrap it in cling film.
- Let the prepared dough rest in the cold for at least 1 hour.
- While the dough is resting, preheat the oven to 175°C.
- Roll out sheets of dough about 0.5 cm thick and cut out of it, using cutters, the various shapes of your choice.
- Place the prepared gingerbread on a baking sheet lined with baking paper, spaced 2.5 cm apart.
- Bake the candy for 10-12 minutes and then let it cool. Then decorate according to your imagination.
