Cupcakes with nut filling and chocolate

Traditionally, this candy is spread with currant jam, but you can also try other types, such as apricot.
Ingredients:
Dough
- 220 g plain flour
- 140 g of butter
- 70 g of sugar
- 40 g ground walnuts
- 1 tbsp unsweetened cocoa powder
- zest and juice of half a lemon
- a pinch of ground cinnamon
Filling
- 200 g ground walnuts
- 70 g of powdered sugar
- 50 ml of rum
- 1 teaspoon of vanilla sugar
- currant jam
Cream
- 200 g of butter
- 70 ml of rum
- 50 g of cooking chocolate
- 5 tablespoons of sugar
- 2 eggs
Glaze
- 100 g of cooking chocolate
- 50 g of butter
Method:
- Mix the flour, sugar, melted butter, ground nuts, cocoa, lemon zest and juice and ground cinnamon in a bowl.
- Knead into a smooth dough, which you then press piece by piece into the cupcake moulds.
- Place the molds in an oven preheated to 175 °C and bake for approximately 10-15 minutes.
- In the meantime, prepare the filling from nuts, sugar and rum.
- Using a spoon, put a small amount of marmalade and then the nut filling into the baked and cooled cupcakes.
- Make the chocolate cream by beating eggs with sugar in a water bath, then add their mixture to the beaten butter.
- Finally, add the melted chocolate and rum.
- Spray the cream on the cupcakes using a decorating tool and let it harden.
- The final step is to dip the cupcakes in a coating made from cooking chocolate dissolved in fat.
