Ingredients

Dough:

  • ¾ cup plain flour
  • ¾ cup whole wheat flour
  • 1 teaspoon ground cardamom
  • ¾ teaspoon of baking powder
  • ¾ teaspoon of salt
  • 10 tablespoons unsalted butter (at room temperature)
  • ¼ cup brown sugar
  • 3 large egg yolks
  • 3 spoons of honey
  • 1 teaspoon of vanilla extract
  • ½ teaspoon finely grated orange peel

Filling:

  • 1 cup fresh figs
  • ¾ cup orange juice
  • 6 spoons of honey
  • ¼ teaspoon salt
  • 1 large egg
  • flour for sprinkling

Method

Dough:

  • Mix both types of flour, cardamom, baking powder, and salt in a bowl.
  • In another bowl, using an electric mixer (medium power), beat the butter and brown sugar until light and fluffy, about 3-4 minutes.
  • Add the egg yolks to the butter mixture and beat for about 2 minutes.
  • Add honey, vanilla, and orange zest. Continue beating for about 1 minute.
  • Reduce mixer speed to a minimum and gradually add dry ingredients. Mix well.
  • Divide the dough into thirds. Wrap each piece tightly in food foil and then flatten the dough to about half its height.
  • Let it cool for at least 3 hours.

Filling:

  • In a large saucepan over medium heat, bring the fresh figs, orange juice, honey, and salt to a boil. Stir occasionally. Cook until the figs are completely soft and the liquid has boiled off 25-30 minutes.
  • Using a potato masher or a large spoon, crush the figs into small pieces and continue to cook, stirring frequently. Cook for 5-7 minutes until a very thick paste-like mixture forms.
  • Transfer the resulting paste from the pan to a plate and spread it in an even layer. Let cool for about 1 hour.
  • Mix the cooled mixture with an egg and a spoonful of water. Pour everything into a pastry bag with a decorative hole.
  • Unwrap the first dough and roll it out or, using your hands, form an even square about 0.1 inches thick.
  • Divide the square into equal-sized rectangles and place a spoonful of the filling in the center. Fold the dough so that the filling is enclosed on all sides.
  • Put the squares with the filling on the prepared baking sheet lined with baking paper and let rest for 10 minutes.
  • Then, put the fig cookies in the oven, preheated to 350°F, and bake for 14-16 minutes.
  • After baking, let the squares cool on the baking sheet for 5 minutes, then transfer them to another surface to cool completely.
  • Newtons, filled with figs, taste best if they are prepared no more than 1 day before eating them.
