Coconut Linzer cookies

You can bake Linzer cookies in different variations. Make its taste special with a little coconut.

Ingredients:

  • 1 and 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 3/4 cup softened butter
  • 3/4 cup cane sugar
  • 1 egg
  • 1 tbsp cornstarch
  • 1/8 teaspoon baking powder
  • 1 and 1/4 teaspoons of vanilla extract
  • 1/4 teaspoon of almond extract
  • marmalade of your choice for sticking

Method:

  1. In a large bowl, beat the butter with the sugar until fluffy.
  2. Add the eggs and extracts and beat once more until combined.
  3. Mix all the dry ingredients in another bowl, including the almond flour, coconut flour, starch, and salt.
  4. Add the dry ingredients to the wet ingredients and mix well until combined.
  5. Divide the prepared dough in half, wrap it in cling film, and refrigerate it for an hour.
  6. Then, roll out the dough and cut out the shapes of Linz cookies, from one half of the bottom to the other half of the top part with a hole in the middle.
  7. Preheat the oven to 340°F.
  8. Place the coconut flour Christmas cookies on a baking sheet and bake for approximately 8-10 minutes.
  9. When the candy cools down, glue it together using the marmalade.
