Cocoa-dimpled cookies with marshmallows and mint

Are you a fan of mint chocolate and marshmallows? Well, you will definitely like this. Try this experiment; maybe baking this cookie will become your Christmas tradition.

Ingredients:

  • ⅓ cup of grated chocolate
  • 6 tablespoons of softened butter
  • ¾ cup brown sugar
  • 1 large egg
  • ¼ teaspoon peppermint extract
  • ¼ cup and 2 tablespoons of cocoa powder
  • ¾ cup semi-coarse flour
  • ½ teaspoon of baking powder
  • ¼ teaspoon salt

For the filling:

  • 6 large marshmallow candies
  • crushed lollipops or peppermint candies for decoration

Method:

  • Preheat the oven to 350°F and prepare two trays lined with baking paper.
  • Melt the chocolate over a water bath.
  • In a medium bowl, beat the butter with the sugar until smooth and fluffy (2-3 min.)
  • Add the cooled chocolate, eggs, mint extract and beat until smooth.
  • Combine the remaining dry ingredients in another bowl, then add them to the whipped mixture.
  • Mix everything thoroughly.
  • Shape the dough into balls, place them on a baking sheet, then press them with your hand and make a well in the middle with your finger.
  • Bake for 8 minutes.
  • Meanwhile, cut the marshmallows into smaller pieces.
  • After 8 minutes, remove the cookies from the oven, pour marshmallows into the wells, and put them back in the oven for another 3-4 minutes.
  • You can sprinkle pieces of lollipops or candies on the baked goods.
