Christmas Sponge Roll with Strawberries

This beautiful sweet chocolate sponge roll is perfect as a special dessert, a birthday cake, or as part of a Christmas Eve treat and is sure to impress your guests.
Surprisingly, it’s very easy to bake.
Ingredients
- 5 egg whites
- 1 cup powdered sugar
- 2 teaspoons corn flour
- 1 spoon of cocoa
- 2.5 cups heavy cream
- 1 vanilla pod
- 1 tablespoon of powdered sugar
- 1 cup strawberries
Method
- Preheat the oven to 300°F.
- Place a sheet of baking paper on a large baking tray.
- Beat the egg whites until soft peaks form.
- Gradually add powdered sugar.
- Sift the cornmeal and cocoa and carefully fold it into the egg whites.
- Tip the mixture onto the prepared baking sheet and spread it evenly using a spatula.
- Bake for 1 hour.
- Remove and let cool.
- Whip the cream with vanilla and powdered sugar.
- Set some whipped cream aside for decorating later.
- Cut the strawberries into quarters, and set aside a handful.
- Mix with whipped cream.
- Turn the baked roulade dough so that the side that was in the oven at the top is at the bottom.
- Carefully peel off the paper.
- Spread the strawberry cream filling on the dough.
- Carefully roll up the roulade.
- Spread with the remaining whipped cream, decorate with strawberries, and sprinkle with powdered sugar.
