Christmas French log Bûche de Noël

Ingredients
- 1/3 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/3 cup cocoa powder
- 2/3 teaspoon baking powder
- pinch of salt
- 1 and 1/8 cups whipped cream, divided
- 4.2 oz dark chocolate
- 2/3 teaspoon vanilla extract
- 2 tablespoons unsalted butter
- 2/3 cup powdered sugar
Method
- Preheat the oven to 220°C (425°F). Line a baking tray with parchment paper.
- In a large bowl, whisk the egg whites until stiff peaks form.
- In a separate bowl, whisk together the egg yolks and powdered sugar until pale and thick.
- Add the flour, cocoa powder, baking powder, and salt to the egg yolk mixture and mix until well combined.
- Add a large scoop of the beaten egg whites to the yolk mixture and mix until combined. Gently fold in the remaining egg whites.
- Spread the mixture onto the prepared baking tray and bake for 7 minutes.
- Remove the tray from the oven and transfer the baked dough onto a clean, dry cloth that’s been generously sprinkled with powdered sugar. Remove the parchment paper and roll up the dough tightly. Let it cool completely.
- In a saucepan, heat 1 cup of whipped cream until hot.
- In a separate bowl, combine the dark chocolate, vanilla extract, and unsalted butter. Pour the hot cream over the chocolate mixture and stir until the chocolate is melted and the mixture is completely combined. Let it cool completely.
- In a mixing bowl, beat the remaining 1/8 cup of whipped cream and powdered sugar until stiff peaks form.
- Unroll the dough and brush it with the whipped cream mixture. Roll it up again.
- Spread the chocolate glaze over the top of the Christmas roll.
- LChill in the refrigerator for at least 30 minutes before serving.
