Chocolate rice stars with Brazil nuts

Ingredients:

For the cookies :

  1. 1/3 cup of whole-grain rice flour
  2. 1/3 cup of maple syrup
  3. 1/4 cup of water
  4. 1/4 cup of cocoa
  5. few Brazil nuts
  6. 6 tablespoons of ground almonds
  7. A teaspoon of psyllium
  8. A teaspoon of baking soda
  9. Half a teaspoon of cinnamon or gingerbread powder
  10. A pinch of ground vanilla

For filling :

  1. 1/4 cup of milk chocolate
  2. few Brazil nuts
  3. A pinch of ground vanilla

Method:

  1. Mix whole-grain rice flour, cocoa, ground Brazil nuts, ground almonds, psyllium, baking soda, gingerbread spice, and vanilla.
  2. Add the maple syrup and water to the mixture and knead the dough.
  3. Preheat the oven to 320°F.
  4. Roll out the dough and cut stars out of it.
  5. Place the stars on a tray lined with baking paper and bake for 15 minutes.
  6. Leave to cool.
  7. Melt the chocolate in a water bath, mix with vanilla, and grind the remaining Brazil nuts for the filling.
  8. Sprinkle the stars with chocolate or mix melted chocolate with ground nuts and decorate the stars with this mixture.
