Carrot Cheese Spread

Try this delicious yet healthy spread that you can combine with any pastry.
Ingredients
- 1 cup carrots
- 1/2 cup soft goat cheese
- A pinch of nutmeg
- salt
- black pepper
- a pinch of cayenne pepper
- a little lemon juice
Method
- Chop the carrots and steam for 12-15 minutes until soft.
- Place the cooked carrots in a blender with goat cheese, a pinch of nutmeg, spices, and a bit of cayenne pepper.
- Add lemon juice.
- Blend to make a smooth puree.
- Taste and adjust seasoning as needed.
