Boiled Potatoes Mayo Spread

Ingredients

• 3 cups salad potatoes
• 1 cup mayonnaise
• 1 tablespoon yellow mustard
• 1/2 cup yellow onion (finely chopped)
• 1/2 cup celery (finely chopped)
• 4 hard-boiled eggs
• salt
• pepper

Method

• Hard-boil the eggs, peel, and finely chop.
• Chop the celery and onion.
• Boil the potatoes in their skins until soft.
• Drain and let cool.
• In a large bowl, combine mayonnaise, mustard, spices, chopped eggs, celery, and onion and stir until combined.
• Add potatoes and mix.
• Put in the refrigerator until you start preparing the sandwiches with potato spread.
