Almond Christmas cookies with honey cream

Ingredients:
- ¼ cup slivered almonds
- 1 cup softened butter
- 1 cup of sugar
- ¼ cup honey
- 1 egg
- ½ teaspoon of almond extract
- ½ cup almond flour
- 3 cups semi-coarse flour
- 1 and ½ teaspoons of baking soda
- ½ teaspoon of salt
- For the cream
- ¼ cup honey
- 2 tablespoons of softened butter
Method:
- Roast the almond slices in a small baking dish in the oven at 365°F. They are ready when they begin to turn golden and fragrant, which takes about 8-10 minutes.
- Cut them into small pieces.
- Beat the butter with the sugar until fluffy (it takes 3-5 minutes).
- Add honey and eggs and beat.
- Add almond extract, almond flour, flour, baking soda and mix well.
- Separate pieces from the finished dough and make balls.
- Place on a tray lined with baking paper.
- Press the balls slightly into a pancake shape and make a hole in the middle with your finger.
- Bake at 365°F for about 8-10 minutes.
- While the cookies are baking, prepare the cream.
- Mix honey with butter.
- Pour the cream into the wells of the cooled cookies and sprinkle with roasted almonds.

- Add all liquid ingredients and whisk.
- Add the pre-mixed dry ingredients and shape the dough.
- Tear off pieces from the dough and shape them into balls.
- Place them on a baking sheet lined with baking paper.
- Press each ball and make a well in the middle.
- Prepare the chocolate filling.
- Beat all ingredients (except nuts) until fluffy (about 2 minutes).
- Fill the holes and decorate with walnut pieces.
- Bake at 350°F for about 10-11 minutes.
- Then, let it cool on the baking sheet for another half hour.
