Whole-grain rice flour Banana bread

Fluffy, soft, and full of banana and coconut flavor, this gluten-free brown rice flour banana bread is one you can’t help but fall in love with.
Ingredients:
- 2 cups of brown rice flour
- 1/2 cup of softened butter
- 1/2 cup of sugar
- two eggs
- three spoons of buttermilk
- teaspoon of baking powder
- half a teaspoon of baking soda
- pinch of salt
- a teaspoon of lemon juice
- mashed ripe banana
- 1 cup toasted coconut
Method:
- Mix the butter, sugar, eggs, lemon juice, and buttermilk in a bowl.
- Also, mix the rice flour, baking powder, baking soda, and salt to the side.
- Combine the flour mixture with the butter mixture, add mashed banana and toasted coconut, and make a dough.
- Place in the bishop’s bread pan and bake for about 50 minutes at a temperature of 380°F.
