Walnut Cake with Coffee Cream

The nuts, coffee, and chocolate flavors come together in this simple recipe. Give it a try; we guarantee it will be the most sought-after treat on your holiday table.
Ingredients:
- 5 egg whites
- 5 egg yolks
- 1/2 cup granulated sugar
- 2 cups of milk
- 1/2 cup ground nuts
- 1/2 cup plain flour
- 1 tablespoon of powdered sugar
- 1/2 cup of butter
- 3.5 oz of granulated sugar
- 1 pinch of salt
- 2 tablespoons of starch
- 3 teaspoons of coffee
- 3.5 oz of 70% dark chocolate
- 0.7 oz of cocoa butter
Instructions:
- Preheat the oven to 350°F.
- Add a pinch of salt and 1/3 cup of powdered sugar to the egg whites in a large mixing bowl. Beat with an electric mixer until stiff peaks form.
- Sprinkle in the remaining 3.5 oz of granulated sugar and beat until the mixture is thick and glossy.
- Sift the flour over the egg mixture and add the ground nuts. Gently fold the mixture with a whisk until combined.
- Spread the mixture evenly onto two baking trays lined with parchment paper. Bake in the preheated oven for about 10 minutes or until golden brown.
- Remove from the oven and let cool briefly. Then, remove the cakes from the tray and let cool completely on a wire rack.
- Heat 1 1/2 cups of milk in a saucepan. Add 3.5 oz of granulated sugar and stir until dissolved.
- Whisk the remaining 1/2 cup of milk in a separate bowl with the egg yolks and cornstarch until smooth.
- When the milk is almost boiling, pour the egg yolk mixture into the saucepan and stir until it thickens.
- Remove from heat and let cool to room temperature.
- In a large mixing bowl, whisk the cooled yolk pudding until creamy. Add the instant coffee and gradually beat the softened butter in small cubes.
- Cut the sponge cakes in half lengthwise. Spread the cream evenly over each cake and roll tightly.
- Place the rolls on a baking sheet lined with parchment paper and chill in the fridge overnight.
- The next day, melt the chocolate and cocoa butter in a double boiler.
- Cut the cake rolls into equal-sized pieces and dip the ends in the melted chocolate.
- Let the chocolate harden before serving. Enjoy!
