Vanilla marzipan

You will appreciate this marzipan recipe, especially as a coating for cakes or other pastries.

INGREDIENTS

  • 1/2 cup of granulated sugar
  • 1 1/2 cup of powdered sugar
  • 2 1/2 cups of ground almonds
  • 1 piece of vanilla pod
  • 2 eggs
  • ½ teaspoon of orange or lemon juice

METHOD

  • Mix all the dry ingredients in a bowl and add the liquid ingredients.
  • Knead the dough thoroughly and let it cool in the fridge.
  • You can roll it out and coat a cake or other pastries with it.
  • To stick the marzipan beautifully to the cake, just spread the cake surface with apricot jam.
