Unbaked Christmas Chocolate-coconut Roll

During the holiday season, coconut is a popular ingredient for Christmas cookies.
Impress your guests with a no-bake chocolate coconut roll that they won’t be able to resist.
You can also treat them to homemade eggnog, which you can find the recipe for on our website.
Ingredients
For the roll
- 2/3 cup sugar
- a few spoons of water
- 21 oz cooking chocolate
- 1 cup milk
- 2 1/4 cups ground chocolate biscuits
For the filling
- 1/2 cup softened butter
- 2/3 cup powdered sugar
- 1 cup coconut flour
- Juice of one lemon
- grated lemon peel
Method
- Start by preparing the filling. Mix the butter thoroughly with the sugar and add the rest of the filling ingredients. Blend until smooth.
- In a bowl, mix water and sugar and boil until a thick syrup forms.
- Add chocolate and milk to the bowl.
- Once the chocolate is melted, remove the bowl from the heat and add the crushed cookies.
- Knead the mixture thoroughly.
- On a surface previously sprinkled with coconut flour, roll the mixture into a rectangle a few millimeters thick.
- Spread the filling evenly over the dough and then roll it up.
- Put the roll in the fridge for a few hours or overnight.
- Decorate the Christmas roll with icing sugar before serving.
