Taquitos with portobello mushrooms and cream cheese

A taquito is a Mexican dish typically consisting of a small rolled-up tortilla containing filling, including beef, cheese, or chicken.
These canapés are not only delicious, but they’re also super easy to make and perfect for feeding a crowd.
So why not give them a try this New Year’s Eve and impress your guests with this tasty and creative appetizer?
Ingredients:
- 2 tablespoons of extra virgin olive oil
- 8.8 oz large portobello mushrooms without gills, finely chopped
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1/2 teaspoon fresh pepper
- 1/4 teaspoon salt
- 1 package of cream cheese
- 4.4 oz full-fat ricotta cheese
- 10 flour tortillas
- frying oil
Instructions:
- Heat the oil in a pan.
- Add the mushrooms and fry for 4 minutes.
- Add spices – oregano, thyme, salt and pepper, fry until the mushrooms turn brown.
- Let the mushrooms cool.
- Mix the cream cheese with the ricotta and add the mushrooms.
- Spread the mixture on the bottom half of the tortilla and roll it up well, toothpicks can be provided.
- Fry the prepared taquitos in oil until golden.
- Place on paper towels and dry from oil.
