Rum Fruit Cupcakes

With minimal preparation time required, these cupcakes are the epitome of perfection.
Ingredients
- 1 1/2 cups raisins
- 1 1/2 cups currants
- 1 1/2 cups sultanas
- 1/3 cup chopped dried apricots
- 1/3 cup chopped prunes
- 3/4 cup chopped orange and lemon peel
- 1/3 cup chopped blanched almonds
- 1 large grated apple
- 1 1/2 cups cane sugar
- 1/3 cup melted butter
- 1/4 cup brandy or rum
- 1/2 teaspoon gingerbread spice
- grated peel and juice of 1 orange
For cupcakes
- 2 cups plain flour
- 1/4 cup cane sugar
- 1/2 cup butter
- 1 teaspoon baking powder
- 1 egg
Instructions
- Grind the almonds and peel them in a food processor, then mix them them with the remaining ingredients in a bowl.
- Cover the bowl and refrigerate for two days, stirring daily.
- Preheat the oven to 350°F.
- Mix all the cupcake ingredients in a food processor to make a dough.
- Knead the dough on a floured surface until smooth.
- Cover with foil and chill for 30 minutes.
- Roll out the dough to a thickness of 1/8 to 1/4 inch. Cut out 24 circles with a 3-inch cutter.
- Place the rounds in molds and add one teaspoon of the ground fruit.
- Roll out pastry scraps again and cut out 24 stars with a cookie cutter.
- Place the stars on the cupcakes with the fruit and brush with the beaten egg.
- Bake for 15 minutes.
- Cool and dust with powdered sugar.
