Whole-grain rice flour Banana bread

Fluffy, soft, and full of banana and coconut flavor, this gluten-free brown rice flour banana bread is one you can’t help but fall in love with.

Ingredients:

  1. 2 cups of brown rice flour
  2. 1/2 cup of softened butter
  3. 1/2 cup of sugar
  4. two eggs
  5. three spoons of buttermilk
  6. teaspoon of baking powder
  7. half a teaspoon of baking soda
  8. pinch of salt
  9. a teaspoon of lemon juice
  10. mashed ripe banana
  11. 1 cup toasted coconut

Method:

  1. Mix the butter, sugar, eggs, lemon juice, and buttermilk in a bowl.
  2. Also, mix the rice flour, baking powder, baking soda, and salt to the side.
  3. Combine the flour mixture with the butter mixture, add mashed banana and toasted coconut, and make a dough.
  4. Place in the bishop’s bread pan and bake for about 50 minutes at a temperature of 380°F.
