Vanilla marzipan

You will appreciate this marzipan recipe, especially as a coating for cakes or other pastries.
INGREDIENTS
- 1/2 cup of granulated sugar
- 1 1/2 cup of powdered sugar
- 2 1/2 cups of ground almonds
- 1 piece of vanilla pod
- 2 eggs
- ½ teaspoon of orange or lemon juice
METHOD
- Mix all the dry ingredients in a bowl and add the liquid ingredients.
- Knead the dough thoroughly and let it cool in the fridge.
- You can roll it out and coat a cake or other pastries with it.
- To stick the marzipan beautifully to the cake, just spread the cake surface with apricot jam.
