Stuffed Spicy Pretzels

Ingredients:
- 3 and 1/2 cups all-purpose flour 450 g plain flour
- 2 and 1/4 tsp active dry yeast
- 1 cup warm water
- 2 tbsp lard
- 1/2 tsp cane sugar
- 1 tsp salt
- 8-10 eggs
- English bacon or smoked flank
- 1 and 1/2 cups gouda
- chili flakes to taste
Instructions:
- In a bowl, combine the yeast, warm water, cane sugar, and 1/2 cup of flour. Mix well and let it rest for 10 minutes until frothy.
- Prepare two trays and line them with baking paper.
- In a separate bowl, mix the remaining flour and salt. Make a well in the center and pour in the yeast mixture. Add lard and knead until a pliable dough is formed.
- Place the dough on a floured surface.
- Divide the dough into about eight pieces.
- Shape each piece into a roll and then roll it into a pretzel shape.
- Once the pretzels are ready, crack an egg into each one, sprinkle with cheese and toasted bacon, and add chili flakes to taste.
- Bake at 428°F for about 10 minutes.
