Stalked Celery Cheese Spread

Creamy celery spread is a delicious side dish made from boiled celery that is perfect for Christmas sandwiches. This spread is a traditional Amish wedding dish.
Ingredients
- 1 celery stalk (finely chopped)
- 1/2 teaspoon of salt
- 1/2 cup water
- 2 tablespoons of sugar
- 1 1/2 teaspoons white vinegar
- 1/4 cup butter
- 1/4 cup cottage cheese
Method
- Cut the celery into bite-sized pieces. Combine the first six ingredients in a medium saucepan and bring to a boil.
- Cover and cook the celery over medium-low heat until tender, about 45-55 minutes.
- Let the celery cool.
- Add the cottage cheese to the cooked celery mixture.
- Mix and spread on sandwiches.
