Ingredients

  • 17.5 oz golden potatoes, peeled and diced
  • handful blanched almonds (or shelled walnuts)
  • 3 to 6 cloves of garlic
  • ¼ cup plus 2 tablespoons fresh lemon juice
  • ¾ cup Greek extra virgin olive oil
  • 1 green onion, trimmed and thinly sliced, for garnish
  • fresh chopped parsley, for garnish
  • zest of 1 lemon for garnish

Method

  • Boil the peeled potatoes, cut them into cubes, and drain the water using a colander. Rinse the potatoes with cold water.
  • Put the cooled potatoes back into the pot and add water so that the potatoes are covered by at least two centimeters. Salt the water generously.
  • Bring to a boil over high heat, then reduce the heat to medium-low and cook for about 10 to 15 minutes or until the potatoes are well cooked.
  • Drain the potatoes again and rinse them, this time with hot water. Wash for 30 seconds. Let the potatoes sit for 5 to 7 minutes to allow excess moisture to evaporate.
  • While the potatoes are cooling, combine the almonds, garlic, a large pinch of salt, and lemon juice in the small bowl of a food processor fitted with the blade.
  • Process until the garlic and almonds are reduced to a paste (as smooth as possible).
  • Mash the potatoes. Using a potato masher or a grinder (do not use a food processor), mash the potatoes thoroughly.
  • Mix mashed potatoes with extra virgin olive oil and garlic-almond paste. Add about ½ olive oil, a little at a time, to the mashed potatoes and mix well with a wooden spoon.
  • Add the garlic and almond paste and mix well. Then add the remaining olive oil, again gradually, and mix well with a wooden spoon.
  • Taste and add more salt if needed. Mix well to combine.
  • If you will not serve the spread immediately, put it in the fridge and let it cool.
