Linzer cookies made of rice flour

Ingredients:  

  1. 1 cup of rice flour
  2. 6 tablespoons of sugar
  3. 1/2 cup of softened butter
  4. half a lemon
  5. 1 egg

Method:

  1. Beat eggs with sugar in a bowl. Add softened butter, lemon zest, and rice flour and knead to form a compact dough.
  2. Wrap it in a plastic bag and put it in the fridge for at least an hour.
  3. Dust the work surface with a little rice flour and roll out the dough to about 0.1 inches thick.
  4. Use cookie molds to cut out circles or other shapes. Place them on a baking sheet lined with baking paper and bake for about 10 minutes at 350°F until golden.
  5. Spread the cooled cookies with your favorite marmalade; always connect two circles on top of each other and sprinkle with sugar. Depending on your taste, you can also add cinnamon or vanilla extract to the dough.
