Gluten-free Almond Flour Gingerbread Cookies

With this recipe for gluten-free gingerbread, you will give traditional Christmas cookies the perfect texture and taste.

Enjoy these gluten-free cookies, dusted with powdered sugar, or decorated with frosting.

Ingredients

  • 3 cups gluten-free plain flour
  • 1 cup almond flour
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 1/2 teaspoons ginger
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon cloves
  • 3/4 cup unsalted butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 1/2 cup molasses
  • 1 teaspoon of pure vanilla extract

Method

  • Whisk the first 8 ingredients in a medium bowl.
  • Beat the butter and brown sugar until light and fluffy.
  • Add the eggs, molasses, and vanilla and mix until well combined.
  • Add the dry ingredients and mix.
  • Wrap the dough in foil and refrigerate for 1 to 2 hours or chill overnight.
  • Preheat the oven to 350°F.
  • Take the dough out of the fridge and roll it out.
  • Cut out various Christmas shapes from the dough and place them on a baking sheet lined with parchment paper.
  • Let the sheets with the cut dough cool for about 10 minutes before baking.
  • Then bake for 15 minutes.
  • Allow to cool completely before decorating with frosting and sprinkles or dried fruit.

The gluten-free dough always benefits from resting overnight in the fridge, so if you can prepare
the dough a day ahead, we recommend doing so.
