Cinnamon-coconut Sugar Biscoff Cookie Balls

The Biscoff cookie balls sound like a great snack option, too. They’re both healthy and delicious with a mix of cookies, nuts, and spices coated in cinnamon-coconut sugar.
Ingredients
- 2 teaspoons of cinnamon
- 2 teaspoons of coconut sugar
- 8 cookies
- 1/2 cup walnuts
- 1/4 cup almond flour
- 2 tablespoons of almond butter
- 2 tablespoons of maple syrup
- 1 teaspoon of vanilla extract
Method
- In a small bowl, combine one teaspoon each of cinnamon and coconut sugar and set aside.
- In a food processor, process cookies, walnuts, almond flour, almond butter, maple syrup, vanilla essence, and 1 teaspoon cinnamon until combined.
- Make balls out of the mixture with your hands.
- Roll each ball in the coconut-cinnamon mixture.
- Before eating, leave to harden in the fridge or freezer for at least 4 hours.
